How does moisture in the refrigerator make the compressor work harder? NoStupidQuestions

I was talking to my landlord about my refrigerator running quite a bit and he said it's because of the humidity. After trying to find something online, I see a lot of sites that say the same thing, but none of them explain it. I get how a compressor would remove humidity, but I thought that the refrigerator works using a thermostat to tell it when to kick on and removing the humidity was just a by-product of making it cold. I guess I just don't understand how it works.
