I haven't seen any posts about fermented bean curd (aka fermented tofu/tofu cheese/preserved tofu). It can be found in jars in Asian grocery stores.
The one I'm currently eating has chili flakes:
But you can buy it without the chili flakes. I like to eat it with steamed broccoli or steamed rice. I think the white fermented bean curd without chilies is a great vegan alternative for blue cheese. It's very creamy and has a pungent flavor similar to blue cheese.
edit: My advice for getting the preserved tofu blocks out of the jar without breaking it is to use a fork and poke one of the cubes and gently pull it out. It's easier to do after you refrigerate it and the jars should be stored in the refrigerator after opening. Do not drain the entire jar of tofu cheese unless you are using the entire jar because the cheese should be stored submerged in the brine that it came in.
