If the woman in this episode of Freakonomics is to be believed, we really shouldn't be putting supermarket-bought raw veggies in our preps. They're already so far from picking time they've exponentially lost most of their micro-nutrient benefits. MealPrepSunday

3 days in the refrigerator and they're essentially just raw carbs at that point. We should only be week+ prepping with cooked or canned or blanched veggies. Raw preps should only be for 2 days, then shop again and re-add fresh raw to the prep.
