This week we are spotlighting /u/satosaison, an East-coaster who likes trashy hummus and kissing boys. My kind of guy!

How long have you been vegan?
I became vegetarian in the seventh grade, and vegan as a freshman in high school. I have been vegan for a little more than thirteen years - half of my life.
Why did you become vegan?
Initially, I didn't have a reason when I went vegan (which, technically, makes it a plant-based diet) - that probably sounds pretty silly, since it is a major life choice to make, but I had a few friends that were vegan, and it seemed like something interesting to do, it was high school after all, and people try all different things to express themselves at that age. Once I had been vegan for a bit, I started to care more and more about animals and how we treat them as a society. I think when you are engaged in an unethical behavior it is hard to confront the wrongfulness of your own actions. When you yourself aren't culpable, it is a lot easier to view the situation objectively.
Who is your vegan role model?
Right now, I am inspired by entrepreneurs like Daphne Chang and Ravi DeRossi working to make New York City more vegan. While ultimately, veganism will only prevail if we learn to value animals as living creatures, rather than as commodities, in the short-term, expanding vegan options with cutting edge bars and restaurants decreases the transaction costs for people exploring veganism. Places like this have made vegan cuisine enter the food scene in NYC as a respected category, I have heard people say things like, "where do you want to go out for dinner this weekend . . . maybe Thai, Vegan or Italian?" If we can remove some of the difficulty and stigma associated with veganism, more people may be willing to explore a vegan lifestyle. Vegan entrepreneurs like these can help take veganism mainstream.
Do you consider yourself a vegan activist? If so, what is your activism style?
Yes, I try to engage with people on a personal level whenever I have the opportunity, whether it is by serving vegan food, educating friends about the environmental impact of animal agriculture, or simply supporting vegan friends.
We also foster rescue dogs saved from the beaches of Puerto Rico through the Sato Project. These animals would be left to suffer and die on the side of the road or beaches if not for this amazing organization, and fostering the dogs for a few weeks while they wait for adoption is an incredibly rewarding experience. If you are around New York or Boston, and are looking for the way to make an impact in the life of an animal, I would strongly suggest getting involved with the organization.
Additionally, I just started at a new law firm, but I hope to get involved with pro-Bono legal organizations supporting animal rights and vegan businesses in the near future, which is something my husband, u/Pbk18 has been working on lately.
If everyone in the world was going to listen to you explain why they should go vegan but you could only say it in one sentence, what would you say to convince the most people?
The question is not whether animals are as important, emotional, or intelligent as we are; it is whether they are important enough that they deserve to live a life free of suffering and exploitation.
What typical vegan stereotypes do you fulfill? Which ones do you not fulfill?
I have an entire shelf in my refrigerator dedicated to kale. I tell everyone I meet that I am vegan within about five minutes.
What are your favorite cruelty free brands or products for clothing/household/toiletry items?
I love the Discerning Brute mens' fashion blog, the and the clothing made by Brave Gentlemen.
The best thing about being vegan? What about the worst?
Best: living a life of kindness. Worst: recognizing that most people are not.
Hummus or guacamole?
Hummus, especially if it is trashy sabra hummus.
What is your favorite food?
Black Beans. I could just eat Black beans and rice for every meal. Black bean and sweet potato burritos are another favorite.
What is your favorite recipe?
Eggplant Caponata. Quarter an eggplant and baste it in olive oil, roast in an oven until tender. In a skillet, sauté shallots and garlic until fragrant, then add seeded tomatoes and red bell pepper and cook until the moisture is gone. Add the eggplant and raisins, and cook for a bit. I often let it cook a bit too long so that the eggplant and tomatoes char, before mixing. To finish, add capers, fresh basil, black pepper, salt, and lemon juice, and serve with crusty bread.
What are your hobbies?
Cooking, theatre, philosophy, and law.
Favorite movie?
Fox and the Hound.
Favorite book?
Right now, the Red Mars, Blue Mars, Green Mars trilogy by Kim Stanley Robinson, it is a scientifically grounded science fiction book focusing on our near future colonization of Mars, that explores concepts like geoengineering and environmentalism, as well as highlighting some of the social and economic struggles we face on earth.
What is your favorite animal?
Harper, who is also vegan!
What are you looking forward to in the future?
One thing that I love about veganism, is that we are still "discovering" new foods. In the last few months, aquafaba and rice paper bacon have been game changers, and new food hacks are being developed all the time (which is why I suggest following whatfatveganseat on Facebook).
