Question about fridge enclosure adjustment or removal HomeImprovement

I am about to close on a house. The seller is taking the fridge so I’m looking for a replacement. The kitchen has a cabinet fixture surrounding the refrigerator. So far it seems that the available space for the fridge limits our options on what we can buy. I’m a little torn between removing the entire enclosure along with the cabinets above the fridge, or just removing the wood on either side. The height and width both seem to be major limiting factors so if we keep the cabinets above I’m guessing we would need to raise them. In that case I have no idea what the best way to handle the molding would be. Does anyone here have any thoughts on how to work with this?

Fridge opening Width 33 5/8 in. Height 66 5/8 in. Depth 26 in.
