What can I do to keep my pimento cheese from getting rock hard in the refrigerator? Cooking

When I buy pimento cheese at the store it always stays soft & spreadable but whenever I make some (many different recipes) it always gets rock hard in the fridge. Why is that? What are they adding to it? -Thanks in advance
