Alright, I know this isn't the most active subreddit, but I couldn't think of another subreddit that, in my mind, would be more suited for what I want to know.
In short, I have an idea for a small business making ice cream in the same way it's made in these viral videos. However, to buy a cold plate such as the ones in the videos, most systems sell for $1000+ from sellers that seem less-than-reputable. I was wondering if I could somehow design something from home that would get the job done.
I have certain resources at my disposal. I have a bit of money available to spend and I have an old refrigerator that I could possibly retrofit. My concerns towards this would be feasibility, however. Would tearing into the fridge be dangerous? Would any of the components even be usable, or is everything in the fridge designed specifically for the fridge casing? Could I achieve the same effect with liquid nitrogen or a similarly cold substance? Are there companies that I could commission to make something for me for relatively less?
I apologize in advance for asking any potentially stupid questions. As you can probably tell, I know next to nothing about refrigeration, only the basic concepts of compressors and gas laws. As far as actual equipment, tools, safety, or practices goes, I'm pretty clueless.
I wanted to address feasibility before I bought a system and committed to more startup cost than potentially necessary. Anyway, I'd really appreciate any and all advice from a knowledgeable party. Many thanks to anybody who would help me out. :)
