What's your take on hot filling (boiling) soup into a clean jar, immediately closing it, and storing in the refrigerator without boiling the jars after filling?
My mom does this for beef stew, minestrone, other soups, and tomato sauce.
Is this generally safe for storage of around 1 to 2 months?
