We have 30 min. lunch breaks at work. I usually just get those microwavable noodle bowls, as they're cheap (80 cents for 4 oz./520 cal.), take only 4-5 minutes to heat, and fairly delicious/filling. But they're not particularly healthy (54% of my daily recommended sodium intake!).
Any ideas for healthier alternatives that don't break the bank (ideally, I'd like to spend $2 or less per lunch)?
We do have microwaves and refrigerators in the break room, and while I don't do a lot of cooking at home, I'm more than willing to take my time and prepare something there, then bring it with me to refrigerate/freeze at work.
