ELI5: Why do refrigerators need a temperature adjustment dial? explainlikeimfive

My refrigerator has been freezing foods lately, so of course I adjusted its temperature accordingly. This made me wonder why this should be necessary. I would think the manufacturer can assume the typical kitchen environment is close to 78F. They know the amount of insulation in the refrigerator door. What other environmental variables cause the need for temperature adjustment? Or is it something else altogether?
