I'm about to spend ~three weeks travelling for work, and before I go I would like to cook up as much food as I can, for my vegetarian boyfriend to live off while I'm away. Throwaway because I want it to be a surprise, and he knows my username.
He's a perfectly capable cook, but prone to getting absorbed in projects and neglecting to shop or prepare food. To make things a bit easier for him (and make me feel less guilty about a long trip away) I'd like to leave some meals either pre-prepared or semi-prepared (like, ingredients mixed up and ready to throw in the pan).
However, we have the world's oldest refrigerator, and the built-in freezer is tiny - it would maybe fit a 2L tub of icecream, and fills with frost easily.
Can anyone recommend recipes that will keep well (in a fully prepared or semi-prepared state) without being frozen?
