Diets to cut fat and remain healthy while Over the Road trucking Fitness

I'm a 22 year old male at the most unhealthy point of my life. I've gained nearly 60 lbs., I'm 6'2 and 290 lbs. but everyone tells me I'm not fat because I'm so tall. I know I'm obese.

Anyhow, I test on Friday morning to get my CDL: class A license. I've been in school for nearly a month and after I pass, hopefully, I'll begin my career sitting on my butt, pretty much. I do not want my weight to spiral even more out of control. Getting exercise is tough over the road but I'll fit it in when I can. Cardio mostly.

I plan on a nearly vegetarian diet with a lot of miscellaneous veggies, nuts, and fruits. I just need advice from you guys! There are stipulations to my food storage that I will have to work around. The majority of places I'll stop at are truck stops so there will not be a wide variety of healthy options to choose from (I'll also ask for help choosing from the limited selections at truck stops). I won't have a refrigerator or freezer with me but I'll have an electrical cooler. I'm guessing most of my food will be dry.

Some of my ideas are:

• Premade fruit and vegetables juices (homemade). They will be kept in my cooler but won't hold for many days. I'll drink those first. • Fruits and Vegetables that don't need refrigeration at all. I'll eat these when my juice drinks are gone. • Trail mix (I plan to make this at home for health and cost) and turkey jerky • Bottle water and the occasional juice
