Cheap and healthy meals while living in a hotel? EatCheapAndHealthy

Sorry if this isn't the appropriate place to ask. If so, please kindly redirect me to the appropriate sub.

For the next two months starting this Sunday I will be living out of a hotel while on travel for work. Luckily, my hotel room will have a full sized refrigerator, a sink, and a stove (but no oven).

I will be working long hours Mon - Sat (~70/wk), so I'm hoping either for things that I can cook in bulk on Sun and eat throughout the week or that do not take too long to cook.
