if I make gnocchi in, let's say, a day in advance, will they stay good in the refrigerator until it is time to cook? Cooking

I fear they will turn into little rubber potato balls if they are not cooked fresh. Are my fears misplaced? If not, are there special precautions I could take to avoid this beside the obvious?

Should I bring them to room temp before cooking?
