DARK CHOCOLATE PEANUT BUTTER MOUSSE PIE RECIPE

Makes 12 Pies – 2 Net Carbs – 27 g fat – 8 g protein – 285 calories

Dark Chocolate Crust: Ingredients 2 cups almond flour (use sunflower seed flour for nut allergy) 1/8 teaspoon salt 2 tablespoons butter 1 egg 1/4 cup unsweetened cocoa powder 1/2 cup Swerve or erythritol or 1/2 teaspoon pure stevia extract

Instructions 1. Preheat oven to 350 degrees.

  1. Add all ingredients into a food processor and process until smooth.

  2. Grease tart/quiche mold – I use this handy 2 pack, also good for making cloud bread biscuits etc.: http://ift.tt/2v9E0Ha

  3. Bake 10-12 minutes. Time varies by oven, check frequently after 10 min in my opinion as these can burn easily. Burnt they still taste good they just get really hard, which actually turns out ok for a nice overly crunchy crust if you want it.

  4. Cool completely before adding filling.

Filling:

4 oz. Cream Cheese, set in room temp. for 2 hours (less if using whipped) I prefer temptee 1/2 cup (8 tbsp) crunchy or smooth peanut butter or almond butter (or other substitute if nut allergy) 5 g organic stevia powder or equivalent powdered sweetener 12 tbsp heavy whipping cream 2 tbsp truvia or equivalent amount of granulated sweetener 10 drops stevia vanilla (or ½ tsp of vanilla if you want)

  1. In a small mixing bowl add heavy whipping cream, truvia (granulated sugar) and vanilla. Beat with mixer, high-speed, until whipped to form firm peaks. Cover and chill in refrigerator until ready to use.

  2. In a medium size mixing bowl add stevia (powdered sweetener), peanut butter and cream cheese. Beat with mixer, on low-speed increasing to high-speed, until ingredients are well mixed (about 2 minutes).

  3. With a large spatula or wooden spoon fold 1/3, at a time, of chilled whipping cream into peanut butter mixture until smooth. Fold or mix lightly by hand, do not use power mixer it will over mix.

  4. Add peanut butter mixture evenly to crusts. Cover and chill in refrigerator for min. 2 hours. Enjoy!
