I picked up two boneless/skinless chicken breasts with the intention of shredding them cold for a chicken salad. Cooked the breasts for a little over two hours at 158 F in a sealed (FoodSaver) bag and once done, threw them directly in the refrigerator to cool overnight.
I'm now reading on every site on the Internet that this was a bad move, that I should have used an ice bath, that I should have removed them from the original sous vide bag, and that I'm a terrible chicken breast owner. Is it safe to assume that I need to throw these away to avoid instant death, or is there hope for them still?
