After a few months of struggling with a mini fridge, opening and closing the door to maintain temperature and humidity, my full sized curing chamber finally came together today! I was able to source a FREE full sized refrigerator, temperature and humidity controllers came in yesterday. As of this morning, I'm finally holding steady at the conditions I've been fighting! I've only got 1 lonzino and a couple venison bresaola in there at the moment, time to fill that baby up!
