Microwaves and potatoes/lentils Fitness

Hi,

I posted this to r/cooking and it got deleted (was not informed why) so I thought this would be the next best place. I'm a full time student and want to reduce fat and increase carbs in my diet. i have a busy schedule with travel and school so I have to use a microwave to eat at school for lunch. I usually would eat beef pasta, but I want to get into something with mashed potatoes, lentils and maybe turkey.

The only thing is I don't know how that will react in a microwave. If i want mashed potatoes, should I just put in mashed potatoes? or will that cause them to go bad? i thought maybe I could cut them into chunks, soften them up a bit by boiling and after microwaving just crushing them with a fork. the second part is lentils, which apparently have to be cooked well or they can be bad for your health - i have never cooked with lentils. would they be okay to be boiled and seasoned, put into a container in a refrigerator for a few days and be reheated in a microwave container?
