I frequently take public transportation to go from Philadelphia, PA to Annapolis, MD using public transportation: train, Mega Bus, train, city bus, city bus. Total travel time in one direction is 5-6 hours. At that point, I stay the weekend with a friend (feeding myself with whatever) until traveling in the opposite direction by the end of the weekend. I usually buy myself a nutrient-rich beverage and a meal in the train station before I start travelling and then I spend more money than necessary by eating out for the whole weekend while I am staying with the friend, but I'd like to begin budgeting the food that I eat, as well as making every meal count. Due to circumstances (college dormitory), I have access to a full-sized refrigerator, freezer, and microwave but very limited access to an oven/stove. I also have the ability to make one trip to a supermarket about 1 mile down the road from the school. I can bring my own utensils/bowls/cooking supplies within reason. Currently I am thinking of making my own noodle/vegetable dish (ramen with sliced avocado and vegetables) but I am curious to hear any recommendations!
