Replace a saddle valve really close to the wall Coffee

I have a 1/2" pipe stub that comes out of the wall behind my refrigerator with a saddle valve for the ice maker/water dispenser. I would like to replace the saddle valve with a real valve to fix some water pressure issues in the fridge.

I picked up a Sharkbite valve. My issue is with the saddle valve position on the pipe stub. It's really close to the wall which will make it hard to get the new valve all the way onto the pipe before hitting the wall.

What are my options for installing the valve?
