There's been a few posts that I've seen here discussing vegan friendly restaurant chains on the road, but I have a bit of a tricky situation!
I'm going on a trip to Chicago in a few months with some friends, and we'll all be stuck in a hotel room/convention center for four days. I'm the only vegan on the trip, and I have no idea what to bring with me. The hotel, unfortunately, doesn't have a refrigerator or a microwave either. (However, I'm thinking about buying a mini fridge and bringing a microwave along with me, but I'm still not sure if it's worth the hassle.) My plan for right now is to bring a lot of fruits, nuts, breads/bagels/baked goods, granola bars, etc. I think it's a good start for a meal plan, but I really wanted to check in with you cool cats to see what you guys would bring!
