Hi guys! I'm new to home brewing and I've got five gallons of hard cider that's just about to finish up it's primary fermentation. The instructions I'm following say it needs to go through the secondary fermentation (the carbonating part) and further storage in the fridge, but I don't have room! How long can I just keep it in a cool, dark place? I used standard sanitation procedure when brewing and it should be around 7% alcohol content; I added about a cup of sugar per gallon of cider.
