Question about brewing over a multiple day period. Homebrewing

I tried to brew yesterday but an emergency arose and I had to stop brewing. I stopped after the mashing process but before the boil. I put the wort into a bucket and put it in the refrigerator. Will this work and if so what temperature should I have set it to? Also during the process the wort was moved around a lot so is there a chance it oxidized? Finally, we began heating up the wort for the boil but it only got to around 160 degrees, is that an issue? Thank you for any responses they are much appreciated.
