Potential Yeast Disaster, Advice Needed! AskCulinary

Hey everybody, total baking novice here. I'm trying to re-create liege waffles from my wife's favorite Belgian restaurant using this recipe:

The recipe calls for 3 teaspoons of instant yeast. Being a total baking newbie, I used an equal amount of fresh yeast. And since I didn't know what the hell I was doing, I just threw the yeast with the liquid ingredients at the beginning. I have since learned I was supposed to activate it or something. It's sat in the refrigerator overnight, and it was definitely rising/giving off gas. So my question is:

Should I go ahead and make these? Will they be disgusting/be inedible/make my family sick?
