We eat a lot of pizza, so I'm always trying to figure out what to do with the leftovers. Tried this once and it was a lot better than I expected. Crispy burnt cheese, warm gooey center, crusty...crust.
Leftover Pizza Bread Pudding
Ingredients
- Two slices of leftover pizza – Any will do, but I would not recommend thin crust.
- 1/4 Cup Milk
- 2 XL Eggs

Whisk together the eggs and milk and set aside.

Cut the pizza into rectangles and squares.

Place the pizza into a small (single-serving) casserole dish, then pour the egg/milk mixture over the top. Cover and let it sit in the refrigerator for at least an hour (the longer, the better).

Remove from the refrigerator and sprinkle Parmesan cheese on top, then bake in a 350° oven for 30-45 minutes, until the top gets crusty and brown.
I'm also curious to know what other creative or weird dishes you all have created with leftover pizza. I've also tried re-heating it on a waffle maker, which turned out pretty good. The waffle maker was a pain to clean, though...until I bought a POWER WASHER.
