Four Meals with One Ham. Recipes Included. EatCheapAndHealthy

This starts with a foundation meal which is the baked ham.

 

Baked Ham and Green Beans
Serves 6-8

  • 7.5 lb (3.75 kg) Smoked ham, bone in

  • Orange juice, 1 cup (8 oz./ 250 ml)

  • Green Beans 2 lbs (1 kg) Canned, frozen or fresh

  • 2 Shallots, minced

  • Salt and pepper

1.Preheat the oven to 325 F (165 C). Put the ham in a large roasting pan and pour the orange juice into the bottom of the pan. Cover the pan tightly with aluminium foil and bake for an hour. After one hour, remove the foil and continue to roast until completely heated, about an additional hour. Baste occasionally during the last hour of cooking. Cook until the thickest part of the ham is 160 F (71 C).
2. In another pot combine the green beans, shallots, 2 tbsp of fat from the roasting pan, salt and pepper. Cook, stirring occasionally, until heated through or the fresh green beans are cooked to desired tenderness.
3. Slice the ham and serve with green beans. Let the remaining ham cool (about 2 lbs will remain) and wrap in plastic wrap and store in the refrigerator.

 

Baked Croque Monsieures Serves 4

  • 4 Slices of Baked Ham
  • 2 tbsp Unsalted butter
  • 2 tbsp All-purpose flour
  • 1 cup/ 250 ml heated milk
  • 3 oz/ 90g Shredded gruyere or Swiss cheese
  • 8 slices of Country (thick) white bread
  • 4 tbsp Dijon Mustard
     
  1. Preheat the oven to 400 F (200 C). Melt the butter in a saucepan over low heat. Add the flour and whisk until smooth. Let the roux cook, whisking constantly, for one minute without allowing it to brown. Slowly whisk in the milk, raise the heat to medium and simmer. Simmer while whisking until thickened ~5 minutes. Remove from the heat and stir in 1/2 c. of cheese and season with salt and pepper. Remove from heat and let stand stirring often until cooled.
  2. Arrange the slices of bread on a baking sheet lined with parchment or foil. Toast the bread turning once, until golden. Remove from the oven and set aside.
  3. Raise the oven to broil (grill). Spread 4 slices of bread with mustard, add 1 slice of ham, 1 tbsp of white sauce, and top each with remaining bread slices. Spread the remaining white sauce over the tops of each sandwich taking care to over the edges. Sprinkle with the remaining cheese. Broil until the cheese has melted and browned, about 2 minutes.

 

Papparedelle with Ham and Peas
Serves 4

  • 1 cup diced ham
  • 2 tbsp unsalted butter
  • 1 cup heavy (double) cream
  • 1 1/2 c. (250 g) frozen peas, thawed
  • 1 lb (500 g) Papperdelle or wide egg noodles
  • 1 cup (125 g) Parmesan Cheese grated

 

  1. Bring a large pot of water to a boil. In a large frying pan over medium heat melt the butter. Add the ham and cook until lightly browned. Add the cream and bring to a gentle boil. Stir in the peas and season to taste. Keep warm over low heat.
  2. Cook the pasta according to package directions. Drain and reserve a little of the pasta water. Add the pasta to the sauce along with half of the Parmesan and thin until desired consistency with the pasta water. Top with remaining Parmesan.

 

Black Bean Soup with Ham Serves 8
 

  • 1 cup (185 g) Diced ham
  • 2 tbsp Olive oil
  • 1 yellow onion, diced
  • 2 carrots, finely chopped
  • 1 celery stalk, finely chopped
  • 2 cloves garlic, minced
  • 2 cans black beans (14 oz/ 455g each), drained and rinsed
  • 6 (1.5 l) cups chicken broth
  • 1/2 cup ( 125 ml) Dry sherry, can also sub white wine or apple cider
  • Salt and pepper
  • 1/4 cup (60g) Sour cream as a garnish
  1. In a large pot over medium heat, warm the oil. Add the carrot, onion and celery. Cook about 5 minutes until the vegetables begin to soften, stirring occasionally. Add the garlic and cook for one minute more. Add the black beans, broth, and sherry. Cover and bring to a boil over high heat. Reduce to medium-low and simmer partially covered for about 15 minutes making sure to stir often.
  2. In a blender or food processor puree 2 cups of the soup and return it to the pot. If you have an immersion blender that can also be used, just take care to not blend the entire pot. Add the ham and simmer until the ham is heated. Garnish with sour cream.
