I am going to use the white bread with biga recipe for bread, but wanted to use some for pizza as well like it suggests. Can I put half of the dough into the refrigerator for a few hours before baking it, or will that mess with it too much?
Due to the time I want to do the long proofing overnight so it is ready for dinner tomorrow. but it says to start at 6pm then bake around noon the next day.
