Hello. Im the executive chef and gm of a small 35 seat bistro. I took this job, and didn't know the financial situation the restaurant was in. 40k In debt.
I actually didn't know any of this information when I took over. I wasn't made privy to the Financials until about 2 months after taking over.
I'm evidently also the 4th kitchen manager in 3 years
The owners also own the attached hotel, which is doing quite well financially. (2m per year) But, while they want the restaurant to run as an amenity to the hotel, they're operating it as a separate entity. They dont even reside in the same state as the business.
They refuse to purchase new equipment for the restaurant, even smaller items like a food processor. The equipment on site is a disaster, all of it is about 25 years old and failing regularly. I had a refrigerator with a plate rack collapse on top of me because the wheel mount rusted through.
I've changed everything around to maximize profits, new menus, better labor /shrinkage control. But, without butt skin seats I can't do anything else.
There is an overall refusal to do advertising, I'd do it myself, but the restaurant doesn't even have a debit card, all non food service purchases have to go through the general manager or the owners.
The general manager is another issue with the failing of the business. Nothing gets done in a timely manner and any requests I have are usually on a 3 month back log.
All in all. How can I help this place? I feel like I'm against a brick wall and am debating a new job in general. The pay couldn't be worse, they pay me far below the median average for a kitchen manager and refuse to give me raise.
I didn't know what to do....
