Very Basic Electrical Circuit DIY

Hi everyone!
I'm wondering if this basic plan is safe, and if I'm missing anything obvious (forgive me if I am.. I promise I've done several hours of research). Here goes. I want to run power to my shed. I anticipate having around 3 indoor lights (150 watts), an outdoor security light (50 watts), a TV (100 watts), speakers (400 watts) two mini-refrigerators (200 watts per), a space heater (1500 watts), and a couple of miscellaneous outlets (50 watts). That comes to a total of 2650 watts, or just north of 22 amps on 120V.

I'd like to run 30 Amps (240V) from my house (maximum 50ft) using 10/3 romex to a subpanel on the shed, then make two circuits from the subpanel, each 120V, using 12/3 romex. Does that sound correct? I know I'm leaving out some details (like where the power comes from) but I'm just trying to validate the basic structure.

One more thing, should I be using a GFCI breaker somewhere in there? I was thinking that would be risky with a refrigerator on the circuit so I only wanted to do it if absolutely necessary.
