WARNING: Highly addictive.
Cookie:
• 1 C almond flour
• 2 T coconut flour
• 3 T cocoa powder
• 1/3 C erythritol
• 1/5 tsp crème de menthe
• A healthy dash of salt
• 3 T room temp butter
• 1 T coconut oil
Coating:
• 2 oz chocolate
• 1.5 T coconut oil
• 1/5 tsp crème de menthe
• 2 T cocoa powder
- Combine dry cookie ingredients, then add wet. Combine very well.
- Put dough in refrigerator for at least 10 minutes.
- Roll out dough and cut out cookies, -OR- form cookie shapes with your hands.
- Bake at 350 degrees for 11-13 minutes. Careful, they can burn quickly.
- As soon as they’re out of the oven, carefully remove from the baking sheet and cool in the fridge or freezer for at least 15 minutes before coating.
- For coating, microwave chocolate and coconut oil at 15-20 second intervals until melted.
- Add cocoa powder and crème de menthe and stir until smooth.
- After cookies have cooled, coat in chocolate and place on foil or wax paper.
- Refrigerate cookies for at least 20 minutes before removing from the sheet.
- Store in an airtight container in the refrigerator. The coating is delightfully melty at room temperature.
