[FP] Keto Samoas? Keto Samoas. Gif inside. keto

I swear I do more than bake and eat keto sweets.


Preheat oven to 325 F.

Cookie (nabbed from http://ift.tt/1F9frdg)

• ½ cup (8 T) butter, softened

• ½ tsp vanilla extract

• ½ cup erythritol

• 2 cups almond flour

• A dash of salt

Caramel (adapted from http://ift.tt/1tKAksX)

• ¼ cup (4 T) butter

• ¼ cup plus 2 T erythritol

• 1 T honey (This helps the caramel's texture considerably and only adds 1g of sugar to each cookie, but leave it out if you feel uneasy.)

• ½ cup heavy cream

• ¼ tsp xanthan gum

• ¼ tsp salt

• ½ cup unsweetened coconut

Chocolate coating

• 6 oz chocolate of choice (I used Lily’s 55% baking bar)

  1. For the cookies, cream together the butter, vanilla, and erythritol. Then combine with the flour and salt.
  2. Make cookie shapes.
  3. Bake at 325 for about 15 minutes, or until cookies are slightly browned. Time will vary depending on how big you made your cookies.
  4. When cookies are done, move to the refrigerator or freezer while you make the caramel.
  5. For caramel, melt together the butter, erythritol, and honey.
  6. Once combined, let the mixture simmer undisturbed until it’s a nice brown color (probably a wee bit darker than mine in the gif).
  7. Remove from heat and add cream. Whisk for a minute, then return to heat.
  8. Whisking over low heat, slowly add the xanthan gum, then the salt.
  9. Add the coconut.
  10. Are your cookies cool now? Good. Coat your cookies in the caramel coconut mixture. Put them back in the fridge or freezer.
  11. Are your cookies cool again? Good. Melt your chocolate at 15 second intervals in the microwave, stirring in between, until smooth.
  12. Using a spoon, coat the back of each cookie, then drizzle chocolate over them.
  13. Chill one more time to harden the chocolate.
  14. Tell those Girl Scouts to take their delicious cookies and shove them in other people’s faces because fundraising is important so you’ll just donate instead.

Makes about 18 cookies. Per cookie: 173 calories, 17 g fat (holy crap), 2.8 g protein, 4.4 g carbs, 1.5 g fiber, 2.9 g net carbs.

Awkwardly enough, I don't even like Samoas. I just wanted to see if I could make a good approximation. If you want to help fund my baking problem by buying some of these, shoot me a PM.
