Cheaper way to make pesto ($.056/ serving) EatCheapAndHealthy

Ingredients:

1/4 cup olive oil ($0.34 - $17.56/101oz)

1/4 cup raw hulled sunflower seeds ($0.33 - 2.69/lb)

2 cloves garlic, chopped ($0.04 - $1.99/lb)

2 oz basil ($1.50 - 2.99/4 oz)

2 oz spinach ($0.51 - 2.56/10 oz)

2 tablespoons nutritional yeast ($0.64 -14.09/ 22 oz)

Instructions:

In a frying pan over medium/low heat, roast the sunflower seeds and chopped garlic until lightly browned, about 4 minutes.

Remove from heat and allow to cool.

In the bowl of a food processor, pulse basil, spinach and nutritional yeast until finely ground.

Add cooled garlic, seeds, and oil to the greens mix and continue to pulse.

Use immediately or store in an airtight container in the refrigerator.

Notes:

For an extra pop of flavor and to help the pesto retain its rich green color for a longer period of time- add a couple teaspoons of lemon juice.
