Made these on a whim and they taste exactly like peanut m&ms so I really have to portion control.
3 cups raw peanuts 30g 100% cocoa (1/4th of baking chocolate bar) 3 tbsp butter (I subbed one of these for coconut oil) Salt Sweetener of choice
Roast raw peanuts on pan in oven at 350F for 30 min. With 5 min to go, melt butter and/or oil on stovetop in pan big enough to hold all nuts then melt down chocolate when pan is hot. When peanuts are ready, dump them in the melted chocolate mix and stir every few min until it starts to cool. Gradually add salt and sweetener to your liking as it reaches room temp. Store in refrigerator to keep chocolate shell from melting in your hand.
