Zero Carb Vanilla Iced Coffee ketorecipes

I saw several posts in keto and ketorecipes wondering how to make a decent iced coffee! Well, I'm trying to cut down on dairy for my skin's health, so butter and heavy cream are no-goes for me, but this iced coffee is wonderfully filling and helps with my calorie and protein macros! Enjoy!

1 1/2 cups brewed coffee (I use the "large cup" setting on my Keurig) 2 tbsp MCT oil (you can use coconut, but I prefer the thinness and flavorless-ness of straight MCT oil) 1 cup unsweetened coconut milk (Silk sells this at Walmart, less than 1 carb per cup) 1 scoop (31g) flavored whey protein powder (I use Isopure Zero Carb in Creamy Vanilla, but if you use something else, this is where your carb count comes from, since everything else is carb free or less than 1)

  1. Brew coffee the night before and set in refrigerator to cool.
  2. Pour oil and coffee into blender (I use a small Ninja blender I got at Wal-Mart for about $20. It's important that the blade is in the center of the bowl, not the bottom, or the powder won't dissolve.)
  3. Measure coconut milk into liquid measuring cup (like a glass Pyrex cup) and add scoop of protein powder to it, swirling gently to dampen the powder.
  4. Very gently pour the milk and powder mixture into the coffee, trying to avoid getting powder on the top of the blade connection.
  5. Blend for about twenty seconds, pour, and enjoy! (Since all the ingredients are cold or room temperature, you don't need ice. At least, I don't).
