We are about to start a major kitchen renovation and will be without a stove/oven and refrigerator for a few weeks. (We may get a mini-fridge, cooler, and campstove if necessary, but just for fun, let's assume not). We will have the following small appliances: Slow-Cooker, Microwave, Toaster, Forman Grill, Breakfast Central (makes Waffle Iron, Pancakes, Eggs). You can assume plenty of pantry space and we are close to great grocery stores. We'd like to limit eating out/take out to dinner 2x/week. Only dietary restriction is no seafood, but we try to keep fairly healthy. How would you go about menu planning in this situation? Any go-to dinner recipes that would work under these conditions?
