Saskatoon your Radio Hand Pies

Crust:

6 cups all-purpose flour

1 tablespoon sugar

2 teaspoons salt

1 pound vegetable shortening, chilled and cut into small chunks

1/2 cup butter, chilled and cut into small chunks

3/4 cup cold water (and more as needed)

1/4 cup chilled vodka
-
1 tablespoon lemon juice
Filling:
-
4 cups Saskatoon or service berries
-
1/4 cup water
-
2 tablespoons lemon juice
-
2/3 cup sugar
-
3 tablespoons minit tapioca
-
1/2 teaspoon cinnamon
-
1/4 teaspoon nutmeg
-
1/4 teaspoon cardamom
Topping:

1/3 cup milk or egg whites, and more as needed

1 cup walnuts, very finely chopped

Sift together the flour, salt and sugar. Cut in the shortening and butter until the mixture resembles fine crumbs. Make a well in the centre and pour in the water, vodka and lemon juice. Fold the dough together until it forms a ball. Divide into two balls and place in refrigerator for an hour. If you don’t plan on using the dough within 5 days, store in the freezer.

Preheat oven to 375˚F (190˚C). Line a baking sheet with parchment paper.

On a lightly floured surface, roll out half of the chilled dough to make a 18” by 24” rectangle. Cut into about four dozen 3” squares. Save the rest of the dough for another recipe.

In a large saucepan, simmer berries in 1/4 cup water for 10 minutes. Stir the lemon juice in with the berries. Combine sugar, tapioca and spices. Stir the spice mixture into the berries. Put a heaping tablespoon of the filling on a square of dough, cover with another square and seal the edges. Cut an “X” into the top. Brush some milk or egg whites on to the top, then sprinkle with walnuts.

Bake in the preheated oven for 40 minutes, or until golden brown on top.
