I live in the UK and one of my guilty pleasures is Chik Fil A's signature dipping sauce. I recently found a way to replicate it at home; the recipe callled for:
- 1 cup Mayo (~13 tablespoons)
- 4 teaspoons mustard
- 2 teaspoons lemon
- 4 tablespoons honey
- 2 tablespoons BBQ sauce
I mixed it all together and am now keeping it in a small sealed Tupperware container in the fridge. Taking those ingredients into account, can anybody guesstimate how long it will stay 'fresh' in my refrigerator? Will it last as long as sealed mayo (its main consistent) would, i.e. six weeks or so, or will some part of the ingredients (the lemon juice, for example) cause it to go bad quicker? I only ask because I don't want to get sick from eating it if it goes bad, and as you can imagine the ingredients have quite strong flavours which might mask any telltale unsavoury flavours that might indicate it starting to go bad…!
Anybody got a decent rule-of-thumb on these things?
Also, when I'm using it, I tend to keep it out of the fridge for about the length of time of a standard meal (for instance I might just put the Tupperware on the table and allow people to serve their own portions from it on to their plates…). Is it possible that this time spent out of the fridge might cause it to expire much faster? Or does repeated exposure to room temperature and then re-cooling in the fridge not really change the length of time it takes to go bad?
