So i made a hot sauce using some hot peppers from my garden. Other ingredients include onion, tomato, pineapple, mango, red pepper, garlic, apple cider vinegar and spices. I didnt test the PH but it should be under 4 due to the vinegar and pineapple.
I Simmered everything for about 20 minutes+ and bottled in airtight sterilized containers, however, it was warm by the time i bottled and not as hot as some sites recommend. How will my sauce fare in the refrigerator? I just dont want to be at risk for botulism or anything.
