Bacon question sousvide

I tried the Chefsteps bacon method and it was awesome. I only seared/fried half the package off though. The other half has been in my refrigerator since last weekend. Given that it cooked overnight, it likely pasteurized, correct? Any thoughts on how long it's safe to keep chilled and on hand?

Side note: passed the sniff test with flying colors.
