I've been using a Sous Vide circulator for a couple of months. It is a wand you clamp inside a large stock sized pan or container that circulates water keeping it at exact temperature. It's what fancy chefs have been using for years, but is basically not much more complex then a crock pot.
You then stick, for example, chicken or steaks into a ziplock bag and put it in the water bath.
An example. Take 3 chicken breasts. Put them in gallon sized zip lock freezer bag, get all of the air out. Get water bath to 150F. Put in zip lock bag of chicken. Let cook for 1 hour 20 min. I know the temps sound low, and it's counter-intuitive, but it's science based highly informed cooking. Sous vide actually pasteurizes the food.
Juiciest Chicken Breast you could ask for.
Can ice bath them in the same bag, and put in refrigerator. Eat during week. Can slice off a 1/8" at a time and make sandwiches (like it was a juicy slice of turkey). One sandwich I make I use honey mustard dressing (coarsely speaking .. a table spoon of dijon, a teaspoon of vinegar, and teaspoon of honey)
Another cold application is chicken salad.
Chicken breast can go for $1.99 a pound on sale.
A hot chicken breast with skin can be seared (skin side down) with salt and pepper in a cast iron pan (or other pan) nicely.

I've only mentioned chicken. You can do Beef steaks, pork, fish, etc., Even slow cook meat like chuck steak, or brisket, which you can sous vide for 1-2 days to break down the collagen rendering tender meat that make you cry.
I'd like to point out the /r/sousvide sub-reddit.
Sous Vide circulators used to cost $1000+. They have been dropping in price to about $200, then to $170. Right now there's a Fathers Day deal to get $50 off a $170 unit. This is cheap enough I figure some of you might be interested.

PS I once went on an all raw veggie diet, with nuts, and fats like avocodo for two months. After a week I had zero appetite and my health started improving drastically. I stopped that diet when winter came and went back to old habits. I want to get back there again.
