Hey Guys!
I plan on cooking a pulled pork for a birthday party. There are (as always) a few complications. We are going on a brewery tour, the day of the party, and I have to work the day prior.
My Question is this: Can I smoke the pork for 4-5 hours the day before, store the shoulder in the refrigerator overnight, and finish in the oven the day of? This would help alleviate a lot of the time spent helicoptering by the smoker during the day of the party.
Has anyone had any experience with this or some tips to share?
