1) Scorch hairs off the head 2) Place head in large pot and cover with water. Boil in broth with some onions, carrots, garlic and black pepper. (I decided to not cover the head completely, so that the broth will be stronger and turned the head midway through.) 3) When the meat falls of the bone, it is ready. Take the head out and pick everything off the bone. 4) Boil the strained broth, to concentrate the flavour and gelatin. 5) Chop the fat, skin and meat (and other little bits). 6) Put the meat mixture in a container and pour over the broth, till the meat is covered. Allow to cool and place in refrigerator. 7) Portion the brawn and freeze it. Then you can simply fry a portion when you feel like it.
Other ideas I have for this is a carbonara type dish, stir fry and teriyaki.
