So I had a chicken carcass and decided to try making stock, which I've never done before. Unfortunately it was later than I realized when I started it and I underestimated my ability to stay up late to finish it.
The chicken was fully cooked beforehand. I brought everything to a boil in the stock pot and it simmered for close to two hours - I had planned to do four. I took it off the heat and added tons of ice, which quickly brought it down to 95 F, and then put the whole thing in the refrigerator.
Can I pull it out the next day, boil off the extra water from the ice, and then continue to simmer it? Or should I write it off as a bad experiment?
