Easy recipe for Caldo De Pollo (Chicken Caldo) cookingforbeginners

Ingredients:
Chicken Breasts (Boneless Optional) – Portion Size Varies, Using 5 here
Potatoes – 4 Small
Carrots – 2 Cups
Tomatoes – 2 Large
Onions – 2 Slices
Cabbage – Half

Spices:
2 Tablespoons of Salt
1 Tablespoon of Cumin Powder
1 Teaspoon of Garlic Powder

Instructions:
Fill a large pot of water and turn the stove on to medium-high heat. Add your chicken and add your salt. Boil for about 30 minutes or until the chicken is fully cooked.

While its cooking, prep you vegetables. You can add any you like, and the amount of each varies on your preference. I really like carrots and usually load mine up, but I only had half a bag. I also add Mexican Calabaza(Squash), but I had none on hand. The vegetables should be bite sized pieces and not huge. The onion is more for flavor here and if you don't like it, don't worry, it's not overwhelming.

After the chicken is cooked, add your cumin and garlic powder, stir until it's evenly distributed. You can add more cumin powder for more flavor and color, but if this is your first time cooking it, don't overdo it. Then slow add your veggies, don't dump them because you will get splashed with hot water.

Cook them until you can get a large spoon and cut them in half with ease, letting it simmer for an extra 10 minutes will enhance the flavor too. Let it cool for a bit and then you're ready to eat! Lime is also a must have with it! It's amazing together.

This recipe fed about 5 people, and you can store it in your refrigerator for a few days and eat a hearty meal. If you want to know how I made the rice, I'd be happy to share that too!
