Does anyone have experience growing bonsai from seeds? gardening

I have a bonsai kit and I want to make sure the directions are correct because I saw other ways of doing it online. The directions say to soak seeds overnight, then add water to compact soil disk squeezing out excess water and sowing the seeds in the soil, put each pot in a plastic bag and perforate it, leave it in a cool light spot for 2-3 weeks. Then put them in the refrigerator for 4-6 weeks. Put in warm spot and ensure that soil remains moist. After seeds germinate remove bag and allow seedlings to strengthen before transplant.

I have red maple seeds, silver birch, and mountain pine.
