I don't have a refrigerator for the foreseeable future. Are there any simple solutions? EatCheapAndHealthy

I cannot keep ingredients that are supposed to be refrigerated for the foreseeable future, and I am hoping some of you have run into this before and might have some advice. My work day is very mobile so if I do prepare a lunch it is generally very simple (usually I pack a peanut butter sandwich and a clif bar). I am only cooking for myself, and I am training for a marathon so most of my diet consists of carbs, mainly rice, beans, and potatoes. I love fresh vegetables, but obviously canned veggies will have to do for now.

Has anybody else had this problem? Does anybody pack a lunch for work that can be prepared the night before but doesn't require refrigeration or reheating?
