Keto Ice Cream keto

I really love ice cream but since it has tons of sugar, it's a no-go. I figured I would try to make it with stevia instead since all of the other ingredients are basically fine and it turned out great! Here's the recipe (adapted from David Lebovitz):

  • 1 cup whole milk
  • A pinch of salt
  • 3/4 tsp stevia powder (the super concentrated kind)
  • 1 vanilla bean, split lengthwise
  • 2 cups heavy cream
  • 3 medium eggs
  • 3 medium egg yolks
  • 1 teaspoon pure vanilla extract
  1. Heat the milk and salt in a pot. Scrape the seeds from the vanilla bean into the milk, then add the bean pod to the milk. Cover, remove from heat, add the stevia (whisking to dissolve) and let sit for 1 hour.

  2. In a medium bowl, whisk the eggs together. Rewarm the milk mixture then gradually pour some of the milk into the eggs, whisking constantly as you pour. Scrape the warmed eggs and milk back into the pot.

  3. Cook the mixture over low heat, stirring constantly and scraping the bottom with a heat-resistant spatula, until the mixture thickens enough to coat the spatula (165-170 degrees Fahrenheit, do not go above 175). Immediately pour the mixture into a bowl that is situated over an ice bath and add the cream and vanilla extract to the mixture. Remove the vanilla bean pod and place in refrigerator to cool.

  4. Freeze the ice cream in an ice cream maker according to the manufacturer’s instructions.
