Last night was the first time I made raw oysters at home. I bought them from the store, rinsed and brushed them off, then shucked them 30 minutes later. Set them on a plate of ice, put that in the refridgerator and ate them less than an hour later.
1: Is there anything I should have done to the oysters before shucking them? Put them in the refrigerator or freezer to cool them down?
2: I have only had oysters in restaurants before. Last night's oysters tasted much more pungent, I guess I would say, than the restaurant oysters that I'm used to. I prefer the milder flavor. Could this be because of something I did during oyster prep?
