I have around 3 pounds of chopped up chicken thighs (cubes of ~ an inch) and left them in the refrigerator to rest in some adobo sauce. Is this safe? I usually leave this amount of meat in the fridge for three days as whole chicken thighs, but does the increased surface area from the cubes risk higher chances of bacteria growth? Does anyone have experience doing this?
