I just performed my first ever kegging two days ago. I'm worried I tried to "carbonate" with N2. Sorry for the title; I just had to do it.
The keg of moose drool clone has been in my refrigerator (50 degF) for two days with the regulator set to the 16.3 PSI I got from a table to get 2.4 volumes CO2. I've been shaking the keg every time I go to the refrigerator for something else. Today, I figured I would try the brew out to see how it was doing. The first time I tried dispensing, I left the pressure where it was for the "carbonation", and I had to be pretty gentle with the picnic faucet to not blast beer all over the place. The beer came out looking nice, although with a suspicious cascading bubbling that had me confused and now worried. I dropped the pressure to 10 PSI based on some formula involving restriction coefficient and length of my tubing, then tried again. The beer came out fine, if fairly slowly. Tasting the second pour, I found that it has zero carbonation.
I bought my kegging supplies from some guy on craigslist. He had a stout tap and other nitrogen-related paraphernalia he tried to sell me, but I ended up with just two kegs, a steel "CO2" tank, and all the requisite tubing and connectors for pretty cheap. My question is this- is it possible I just tried to carbonate with N2? If so, can I get a CO2 tank and just try again?
